Garlic Prawns Recipe - Thai Style
You guys, this recipe is a total game-changer for anyone who loves big flavor but doesn't have hours to spend over a hot stove. I first fell in love with Thai-style garlic prawns during a trip a few years back, and I have been trying to recreate that perfect balance of savory, sweet, and spicy ever since. This version is so easy that it has quickly become a staple for our "Fancy Friday" dinners at home. The secret is definitely in the high heat and the abundance of fresh garlic that creates a beautiful, caramelized coating on the succulent prawns. Serve this over a bed of jasmine rice to soak up all those delicious juices, and you’ll feel like you’re sitting at a seaside bistro.
Ingredients:
- 1 lb large prawns (peeled and deveined, tails left on for presentation)
- 10 cloves of garlic, finely minced (measure with your heart!)
- 2 tablespoons vegetable oil or coconut oil
- 1 tablespoon fish sauce (the secret ingredient for umami flavor)
- 1 tablespoon soy sauce
- 1 teaspoon sugar (palm sugar or brown sugar works best)
- 1/2 teaspoon white pepper
- Fresh cilantro and lime wedges for garnish
- Optional: Sliced red chilies for a little kick
Instructions:
- Start by patting your prawns dry with a paper towel. This is super important if you want that perfect sear!
- In a small bowl, whisk together the fish sauce, soy sauce, sugar, and white pepper until the sugar has mostly dissolved.
- Heat your oil in a large skillet or wok over medium-high heat. Once the oil is shimmering, toss in that glorious minced garlic.
- Sauté the garlic for just about 30 seconds until it becomes fragrant and slightly golden. Be careful not to let it burn, as bitter garlic is a no-go!
- Add the prawns to the pan in a single layer. Let them sear for about 1-2 minutes per side until they turn that beautiful pink, opaque color.
- Pour the sauce mixture over the prawns and toss everything together quickly to coat. Let it bubble for another 30 seconds until the sauce thickens into a glaze.
- Remove from heat immediately and garnish with plenty of fresh cilantro and a squeeze of lime juice. Serve hot and enjoy!
Grow Your Own Garlic in Containers
Now, if you are as obsessed with garlic as I am, you probably go through those store-bought sleeves of garlic way too fast. I decided this year that I wanted to try my hand at growing my own, but since we don't have a massive plot of land, I turned to container gardening. It is honestly so rewarding to see those little green shoots popping up! Plus, there is something so incredibly satisfying about knowing exactly where your food comes from. Growing garlic in containers is the perfect project for beginners because it is relatively low-maintenance and doesn't require a lot of fancy equipment. It’s a great way to get the kids involved in the garden too!
What You'll Need:
- A deep container or pot (at least 8-10 inches deep) with drainage holes
- High-quality potting mix enriched with compost
- A few heads of organic garlic (hardneck or softneck varieties work great)
- A sunny spot on your porch, balcony, or patio
- Watering can and a balanced organic fertilizer
Steps to Success:
- First, pick out your container. Ensure it has plenty of holes at the bottom because garlic hates having "wet feet." Fill it up with your potting soil, leaving about two inches of space at the top.
- Break apart your garlic bulbs into individual cloves. Make sure to keep the papery skin on each clove and choose the biggest, healthiest-looking ones for planting.
- Poke holes in the soil about 4-6 inches apart. Place each clove in a hole with the pointy end facing up and the blunt (root) end facing down.
- Cover the cloves with about 2 inches of soil and give them a good watering to settle everything in.
- Place your pot in a spot that gets at least 6 hours of sunlight a day. If you are planting in the fall (which is the best time for garlic), you can add a layer of straw on top to insulate them through the winter.
- Keep the soil moist but not soggy. In the spring, you'll see green sprouts! You can even harvest the "scapes" (the curly green stems) in early summer for a delicious pesto.
- Once the bottom leaves start to turn brown and dry out (usually by mid-summer), it’s harvest time! Carefully dig up your bulbs, let them cure in a dry place for a few weeks, and you’ll have homegrown garlic ready for all your favorite recipes.
