It is much better than the ones you buy at the supermarket because it doesn't have any of those strange preservatives. It tastes fresh, bright, and very homemade. Ingredients:

• 1 cup of high-quality creme fraiche (the thicker, the better!)
• 2 tablespoons of freshly squeezed lemon juice (don't use the bottled kind, friends)
• 1 teaspoon of sugar to balance the sourness
• 1 small clove of garlic, very finely minced or pressed
• A big handful of fresh herbs like chives, parsley, or dill, finely chopped
• Salt and freshly cracked black pepper to taste

• 2 cups of heavy cream (make sure it is not "ultra-pasteurized" if possible)
• 3 tablespoons of active culture buttermilk

Instructions:

This process is so simple, but you must plan ahead! Take a clean glass jar and pour in your heavy cream. Add the buttermilk into the jar and stir it gently with a clean spoon. Now, you just cover the top of the jar with a clean cloth or a piece of paper towel and secure it with a rubber band. This lets the cream "breathe" while it transforms. Place the jar on your kitchen counter in a warm spot, but not in direct sunlight. Now, you must wait for about 12 to 24 hours. Don't touch it! Just let the natural cultures do their work. After a day, you will see it has become very thick. Give it one gentle stir, put a solid lid on it, and place it in the refrigerator. It will thicken even more as it chills.
