Whether you want something spicy and hot to wake up your taste buds or something cold and refreshing for a hot afternoon, I got you covered. My family always asks for seconds whenever I make these, so you better make extra, okay? Let's go and see how we make these delicious dishes!
Easy Garlic Chilli Prawn Pasta
Aiyo, if you love garlic like I do, this recipe will make your house smell so good! This Garlic Chilli Prawn Pasta is the ultimate comfort food. The secret is to use very fresh prawns—don't use those frozen ones that have no taste. When you fry the garlic and the chili together in the olive oil, the aroma is just heavenly. It is spicy, it is savory, and it is so satisfying. This is the kind of meal you make when you want to impress your friends but you actually only spent 15 minutes in the kitchen. Just remember, don't overcook the prawns, later they become like rubber and then very "rugi" (waste of money)!
Ingredients:
- 250g Spaghetti or Linguine (any long pasta also can)
- 12-15 Large Prawns (peeled and deveined, but keep the tails for beauty)
- 6 cloves of Garlic (minced very finely, don't be stingy!)
- 2 teaspoons Dried Chili Flakes (add more if you are brave)
- 1 tablespoon Fresh Parsley, chopped
- 4 tablespoons Extra Virgin Olive Oil
- Salt and Black Pepper to taste
- A squeeze of fresh Lemon juice
Instructions:
- First, boil a big pot of water. Add a lot of salt—it must taste like the sea, okay? Cook your pasta until it is al dente. Don't make it too soft!
- While the pasta is cooking, heat the olive oil in a large pan over medium heat. Add the minced garlic and chili flakes. Fry them slowly until the garlic is golden but not burnt. If you burn the garlic, it will taste bitter, and your whole dish is ruined!
- Add the prawns into the pan. Cook them for about 2 minutes on each side until they turn pink and curly.
- Take half a cup of the pasta cooking water and pour it into the pan. This is the secret to making a nice sauce that sticks to the noodles.
- Drain the pasta and toss it straight into the pan with the prawns. Mix everything well.
- Season with salt, pepper, and throw in the fresh parsley. Give it one last toss and turn off the heat.
- Squeeze some lemon juice over it before serving. So fresh!
Refreshing Prawn Pasta Salad
Now, if the weather is very hot and you don't feel like eating a heavy, steaming hot meal, this Prawn Pasta Salad is the best choice. It is also perfect for "tapau" to the office for lunch the next day because it tastes even better after the flavors have sat together for a while. Ingredients:
- 300g Short Pasta like Fusilli or Penne
- 200g Cooked Prawns (chilled)
- 1 Red Bell Pepper, diced small
- 1 Japanese Cucumber, diced
- Half a Red Onion, finely sliced
- 3 tablespoons Mayonnaise or Greek Yogurt
- 1 tablespoon Lemon juice
- 1 teaspoon Honey
- Salt, Pepper, and a bit of Dill or Chives for garnish
Instructions:
- Cook your pasta in salted water according to the packet instructions. Once it is done, drain it and rinse it under cold water immediately. This stops the cooking and keeps the pasta firm.
- In a large mixing bowl, whisk together the mayonnaise, lemon juice, honey, salt, and pepper. This is your creamy dressing.
- Add the cooled pasta, the cooked prawns, the bell peppers, cucumber, and red onion into the bowl.
- Gently toss everything together until every piece of pasta and every prawn is coated in that delicious dressing.
- Cover the bowl and put it in the fridge for at least 30 minutes. Trust me, it tastes much better when it is cold!
- Before serving, sprinkle some fresh herbs on top. It looks so professional, your friends will think you bought it from a deli!
