Creamy Pasta with Roasted Cherry Tomatoes

This one is very high class, just like what you get at a fancy Italian restaurant but made in your own kitchen with love. Ingredients
- 500g Spaghetti or Penne (any pasta your family likes)
- 2 pints of sweet cherry tomatoes
- 4 cloves of garlic, smashed (put more if you love garlic like I do!)
- 1/2 cup heavy cream or cooking cream
- 3 tablespoons extra virgin olive oil
- Fresh basil leaves for that nice smell
- Grated Parmesan cheese (don't be stingy!)
- Salt and black pepper to taste
Instructions
- First, preheat your oven to 400°F (200°C). Wash your tomatoes and put them in a baking tray.
- Drizzle the olive oil over the tomatoes, add the smashed garlic, and a bit of salt. Toss everything so they are well coated. Roast for about 20-25 minutes until they start to pop and look a bit charred. Wah, the smell will be so good!
- While the tomatoes are roasting, boil a big pot of water with plenty of salt. Cook your pasta until it is "al dente"—that means still a bit firm to the bite, not too soft like porridge!
- Once the tomatoes are done, take them out and carefully smash some of them with a fork to release the juices.
- In a large pan, pour in the heavy cream and let it simmer for a minute. Add the roasted tomatoes and all those delicious oils from the tray.

- A squeeze of lemon juice for freshness
- Salt to taste
Instructions
- Start by roasting your cherry tomatoes in the oven at 400°F (200°C) with some olive oil and salt for about 20 minutes. You want them to look soft and juicy.
- Boil your pasta in salty water until cooked. Save at least half a cup of that starchy pasta water before you drain it!
