Ingredients
- 2 tablespoons extra-virgin olive oil
- 1 medium yellow onion, finely diced
- 4 cloves garlic, minced
- 2 (28-ounce) cans crushed tomatoes (San Marzano style is best!)
- 2 tablespoons tomato paste
- 1 teaspoon dried oregano
- 1/2 teaspoon red pepper flakes (optional, for a little kick)
- A handful of fresh basil leaves, torn
- Salt and black pepper to taste
- 1 teaspoon sugar (optional, to balance the acidity)
Instructions
- Heat the olive oil in a large pot or Dutch oven over medium heat. Add the diced onion and cook until translucent and soft, about 5 minutes.
- Stir in the minced garlic and cook for just another minute until you can really smell it.
- Add the tomato paste and stir it into the onions and garlic, letting it caramelize slightly for 2 minutes to deepen the color.
- Pour in the crushed tomatoes. Stir in the oregano, red pepper flakes, salt, pepper, and the optional sugar.
