Hello everyone! If you are like my family, you are always looking for something quick, healthy, and super yummy to whip up after a long day at work or school. We all love our traditional rice and noodle dishes, but sometimes, a simple pasta is just what we need to change things up. You don't need a lot of fancy ingredients or expensive cream to make a restaurant-quality meal at home. In fact, some of the best flavors come from just a few fresh items you probably already have in your kitchen. Today, I want to share two of my favorite ways to cook pasta using fresh tomatoes. These recipes are so easy, even the kids can help out! Trust me, once you try making these, you will see that you don't need those heavy bottled sauces anymore. Let’s get into the kitchen and start cooking!
Classic Olive Oil and Fresh Tomato Pasta
This first recipe is a real lifesaver when you want something light but satisfying. It’s all about the quality of the olive oil and the sweetness of the tomatoes. In our house, we like to say that if the ingredients are fresh, the food will always taste good! This dish is perfect for a weekend lunch or a light dinner. It’s very clean-tasting, and you can really appreciate the natural flavors. Don't be shy with the garlic either—we always add a little extra for that wonderful aroma that fills the whole house.
Ingredients:
- 250g Spaghetti or Linguine
- 4 large ripe tomatoes, diced small
- 4 cloves of garlic, thinly sliced (or more if you love garlic!)
- 1/4 cup extra virgin olive oil
- A pinch of red chili flakes (optional, for a little kick)
- Salt and black pepper to taste
- Fresh parsley or basil for garnish
Instructions:
First, bring a large pot of salted water to a boil. Cook your pasta according to the package instructions until it is "al dente"—this means it should still have a little bite to it, not too soft! While the pasta is boiling, take a large pan and heat your olive oil over medium heat. Add the sliced garlic and chili flakes. You want to cook the garlic until it is just golden and smells amazing, but be careful not to burn it! Next, toss in those beautiful diced tomatoes. Let them cook for about 5 minutes until they start to soften and release their juices. Once the pasta is ready, drain it (save a little bit of that starchy pasta water!) and toss it directly into the pan with the tomatoes. Mix everything well, adding a splash of the pasta water if it looks a bit dry. Season with salt and pepper, garnish with your fresh herbs, and serve immediately. So simple and so tasty!
Bursting Cherry Tomato Pasta Delight
Now, if you want something with a little more "pop," this cherry tomato version is a must-try! Cherry tomatoes are like little flavor bombs; when they heat up, they burst open and create their own natural, sweet sauce that coats the pasta perfectly. My aunties always say that this is the best way to get children to eat their vegetables because it’s so sweet and colorful. This dish looks very impressive on the table, but it actually takes less than 20 minutes to make. It’s the perfect "I’m too tired to cook" meal that still feels like a treat.
Ingredients:
- 300g Short pasta like Penne or Fusilli
- 2 cups of sweet cherry tomatoes, halved
- 3 tablespoons olive oil
- 2 cloves of garlic, minced
- A handful of fresh baby spinach or basil leaves
- Grated parmesan cheese (as much as your heart desires!)
- Salt and pepper for seasoning
Instructions:
Start by boiling your pasta in salted water until perfectly cooked. In a wide skillet, heat the olive oil over medium-high heat. Add your cherry tomatoes to the pan. You want to hear that sizzle! Let them cook for a few minutes without stirring too much, so they get a little bit of color. Then, add the minced garlic and stir. As the tomatoes cook, use your spoon to gently press down on some of them so they "pop" and create a juicy sauce. Once the tomatoes are soft and saucy, add in your fresh spinach or basil and let it wilt for just a minute. Add your cooked pasta into the pan and toss everything together so every piece of pasta is covered in that sweet tomato goodness. Turn off the heat and sprinkle a generous amount of parmesan cheese on top. Give it one last mix and you are ready to eat. Trust me, your family will be asking for seconds!
