Classic Premium Style Tomato Basil Pasta
This first version is what I call the "Premium" version because it looks so beautiful on the plate, just like the ones you see in fancy food magazines. The secret here is to use very ripe tomatoes and not to overcook the basil. You want that bright green color to pop against the deep red sauce! This is a perfect dish for when you want to impress your friends or just treat yourself after a long day of work. It is very simple but the flavor is very deep. Make sure you use a good quality olive oil because it really carries the flavor of the garlic through the whole dish. Don't be shy with the herbs, ah! Fresh is always best for this one.
Ingredients for Premium Style:
- 400g Spaghetti or Linguine
- 5 large ripe Roma tomatoes (diced finely)
- 4 cloves of garlic (minced)
- 1 small yellow onion (chopped)
- 1 large bunch of fresh basil leaves
- 3 tablespoons Extra Virgin Olive Oil
- 1 teaspoon sugar (to balance the acidity)
- Salt and black pepper to taste
- Grated parmesan cheese (optional but highly recommended!)
Cooking Instructions:
- First, boil a big pot of water with a lot of salt. "Salt it like the sea," as they say! Cook your pasta until it is al dente. Do not throw away all the pasta water; keep a small cup of it for later.
- While the water is boiling, heat your olive oil in a large pan over medium heat. Add the minced garlic and onions. Fry them until they are soft and smelling very good, but don't let the garlic burn or it will taste bitter!
- Add your diced tomatoes into the pan. Stir them well and let them cook down for about 10-12 minutes until they become a thick, bubbly sauce. Use your spoon to mash the tomato pieces.
- Add the sugar, salt, and pepper. If the sauce looks too dry, pour in a little bit of that pasta water you saved. This makes the sauce very silky and sticks to the noodles perfectly.
- Turn off the heat and throw in your fresh basil leaves. Stir them gently so they wilt but stay green.
- Toss your cooked pasta into the pan and mix everything together. Serve it hot with a big sprinkle of cheese on top. So yummy!

Ingredients for Insanely Good Version:
- 500g Penne or your favorite pasta shape
- 2 cans of high-quality crushed tomatoes
- 1 tablespoon tomato paste (for extra richness)
- 1/2 cup fresh basil leaves (torn by hand)
- 2 tablespoons butter (this makes it so smooth!)
- 1/2 teaspoon red chili flakes (for a little kick)
- 4 tablespoons olive oil
- Freshly cracked black pepper
Cooking Instructions:
- Start by cooking your pasta in salted boiling water. Usually, penne takes about 10 minutes. Drain it and set aside.
- In a deep skillet, heat the olive oil and add the tomato paste. Fry the paste for 2 minutes to wake up the flavor—it should turn a bit darker.
- Pour in the crushed tomatoes and add the red chili flakes. Let this simmer on low heat for about 15 minutes. You want the sauce to reduce and become very thick and concentrated.
- Add the butter at the end and stir it in. This is my secret tip! The butter makes the tomato sauce taste less acidic and very "velvety" on the tongue.
- Tear the basil leaves with your hands instead of cutting them with a knife; this keeps the edges from turning black and releases more oils. Stir them into the sauce.
