These recipes are very simple, but the results are so elegant. Your family will definitely ask for seconds, and you will be so happy to see them eating their vegetables! Roasted Cherry Tomato Pasta
This first recipe is a classic in my home. It is all about letting the natural flavors of the ingredients shine through. We use plenty of garlic—because as we know, there is no such thing as too much garlic! The olive oil and the juices from the tomatoes mix together to create a light but very satisfying sauce that coats every strand of pasta perfectly. It is the ultimate comfort food for a weekend lunch or a cozy dinner.
Ingredients:
- 1 pound of dried pasta (spaghetti or penne works great)
- 2 pints of fresh cherry tomatoes
- 4-5 large cloves of garlic, thinly sliced
- 1/2 cup of high-quality extra virgin olive oil
- A handful of fresh basil leaves, torn
- 1/2 teaspoon of red pepper flakes (if you like a little kick!)
- Salt and black pepper to taste
- Freshly grated Parmesan cheese for topping
Instructions:
- First, preheat your oven to 400 degrees Fahrenheit. You want it nice and hot so the tomatoes burst quickly.
- Wash your cherry tomatoes and pat them dry. Place them on a large baking sheet.
- Add the sliced garlic to the pan and pour the olive oil all over the tomatoes. Sprinkle with salt, pepper, and the red pepper flakes. Toss everything together with your hands so every tomato is coated in that liquid gold oil.
- Roast in the oven for about 20 to 25 minutes. You will know they are ready when the skins start to pop and the juices are bubbling.
- While the tomatoes are roasting, boil a large pot of salted water. Cook your pasta until it is "al dente" (just a little bit firm). Before you drain the pasta, save about half a cup of that starchy pasta water!
- Drain the pasta and put it back into the pot. Pour the entire tray of roasted tomatoes and all those delicious oils and garlic right over the pasta.
- Add the fresh basil and a splash of the pasta water. Toss it all together gently. The water helps the oil turn into a creamy sauce.
- Serve it hot with plenty of Parmesan cheese on top. So yummy!
Super Quick & Easy Roasted Cherry Tomato Pasta Sauce

This "super quick" version focuses on getting that deep, roasted flavor in a shorter amount of time. It is very straightforward and uses things you probably already have in your pantry. I love making this when I want something that feels fancy but takes very little effort. It is so fresh and bright, it will wake up your taste buds immediately!
Ingredients:
- 12 ounces of your favorite pasta
- 3 cups of cherry tomatoes (red or yellow, or a mix!)
- 3 tablespoons of olive oil
- 3 cloves of garlic, smashed
- 1 teaspoon of dried oregano
- Salt and pepper to taste
- A squeeze of fresh lemon juice
- Fresh parsley for garnish
Instructions:
- Start by heating your oven to 425 degrees Fahrenheit. A higher heat helps us get that roasted flavor even faster.
- On a baking tray, spread out your cherry tomatoes and the smashed garlic cloves. Drizzle with olive oil and sprinkle with the dried oregano, salt, and pepper.
- Slide the tray into the oven and roast for 15-18 minutes. The tomatoes should be very soft and slightly charred on the edges.
- While the tomatoes are doing their magic, cook your pasta in boiling salted water according to the package directions.
- Once the tomatoes are done, take a fork and gently mash a few of them right on the tray. This releases even more juice to make the sauce extra saucy!
- Toss the cooked pasta with the roasted tomatoes, making sure to scrape up all the bits of garlic and herbs from the pan.
- Add a small squeeze of lemon juice at the very end—this is my secret tip! It makes the tomato flavor really "pop."
- Top with fresh parsley and serve immediately while it is steaming hot. Your family will be so impressed with how fast you made such a delicious meal!
