Classic Savory Bacon and Tomato Pasta

- 500g Spaghetti or your favorite long pasta
- 6-8 strips of thick-cut bacon, chopped into small pieces
- 1 large onion, finely diced

- 1 can (400g) of crushed tomatoes or diced tomatoes
- 1 teaspoon of dried oregano or Italian seasoning
- Salt and black pepper to taste
- A pinch of chili flakes (if you want that extra kick!)
- Fresh parsley or parmesan cheese for garnishing
Instructions
- First, bring a large pot of salted water to a boil. Cook your pasta according to the package instructions until it is "al dente"—that means it still has a bit of a bite, not too mushy!
- While the water is boiling, take a large pan and fry your bacon pieces over medium heat. You don't need oil because the bacon will release its own fat. Fry it until it's nice and crispy.
- Remove some of the excess fat if you want to be healthy, but keep about two tablespoons for flavor. Add the onions and garlic to the pan. Sauté them until they are soft and fragrant. Don't let the garlic burn!
- Pour in the crushed tomatoes and add your dried herbs and chili flakes. Let the sauce simmer for about 10 minutes on low heat so the flavors can get to know each other.
- Drain your pasta, but save a little bit of that starchy pasta water. Toss the pasta into the sauce. If it's too thick, add a splash of that saved water.
- Mix everything well until every strand of pasta is coated in that delicious red sauce. Serve it hot with a sprinkle of cheese on top. So shiok!
Easy Bacon, Pepper, and Tomato Pasta Sauce

Instructions
- Start by boiling your pasta in salted water. Remember to give it a stir so it doesn't stick together.
- In a frying pan, heat a little bit of olive oil and fry the bacon until it starts to brown.
- Add the sliced onions and the bell peppers. Cook them for about 5 to 7 minutes until the peppers are soft and slightly caramelized. This sweetness is the secret ingredient!
- Stir in the tomato paste and cook it for one minute, then pour in the tomato passata.
- Add a teaspoon of sugar, salt, and pepper. Let the sauce bubble away on a low flame for about 15 minutes. You want it to thicken up nicely so it clings to the pasta.
- Once the sauce is thick, stir in the fresh basil leaves. The heat from the sauce will wilt them and release a beautiful aroma.
- Combine the cooked pasta with the sauce. Make sure the peppers and bacon are evenly distributed.
