If you have a small garden at the back of your house, or even just a few pots on the balcony, you should try growing your own tomatoes. But even if you buy from the wet market, it is still very good. Today I want to share with you how to make the best tomato sauce ever. It is so simple, even my nephew who doesn't know how to boil water can do it. Let's look at these two ways to make your kitchen smell like a five-star Italian restaurant, but with the love of a home cook.
Classic Garden Fresh Tomato Sauce Style
This first version is very traditional and brings out the natural sweetness of the tomatoes. You don't need fancy equipment, just a big pot and some patience. When the tomatoes are simmering on the stove, the whole house will smell so nice, your neighbors will surely come knocking to ask what you are cooking! This sauce is perfect for spaghetti or even as a base for your homemade pizza. Don't throw away the skins if you like a bit of texture, but if you want it smooth like the ones in the restaurant, you can blend it later. So easy, right?
Ingredients:
- 5 lbs of fresh ripe tomatoes (use the red ones!)
- 4 cloves of garlic, smashed and chopped
- 1 large onion, finely diced
- 2 tablespoons of olive oil
- A handful of fresh basil leaves
- 1 teaspoon of sugar (to balance the sourness)
- Salt and black pepper to taste
Instructions:
- First, wash your tomatoes properly. Cut a small 'X' at the bottom of each tomato.
- Boil a big pot of water and drop the tomatoes in for just 30 seconds, then put them in cold water. The skin will peel off so easily, wah!
- Chop the peeled tomatoes into small pieces. Keep all the juice, don't waste!
- In a large pan, heat the olive oil and fry the onion and garlic until they are soft and smell very fragrant.
- Add the tomatoes and their juice into the pan. Bring it to a boil, then turn down the heat to low.
- Let it simmer for about 45 minutes to one hour. You want it to become thick and rich.
- At the very end, tear the basil leaves and throw them in. Add your salt, pepper, and that little bit of sugar. Stir well and you are done!
Quick Home-Style Fresh Tomato Sauce
Now, if you are very busy and don't have time to peel every single tomato, don't worry, I have another way for you. This one is more rustic and very fast. We call this the "lazy person" sauce but the taste is still very "power." You just chop everything and let the fire do the work. It is perfect for those weeknights when you come home tired from work but still want to give your family a good meal. My kids love this one because it feels very chunky and hearty. Serve this with some garlic bread and they will finish everything, no leftovers at all!
Ingredients:
- 8 to 10 large ripe tomatoes, roughly chopped
- 3 tablespoons of butter (makes it very creamy!)
- 1 medium onion, cut into half
- A pinch of dried oregano or Italian seasoning
- Salt to taste
- Optional: Some chili flakes if you like a bit of a kick
Instructions:
- Take a medium-sized pot and put your chopped tomatoes inside.
- Add the butter and the two halves of the onion. You don't even need to chop the onion small, just let it sit there to give flavor.
- Turn the heat to medium-low and let it simmer uncovered for about 40 minutes.
- Every now and then, give it a stir and use your spoon to mash the big pieces of tomato.
- Once the sauce has thickened and the butter has mixed in nicely, take out the onion halves and throw them away (or eat them, I won't tell!).
- Add your salt and the dried herbs. If you like it spicy, put the chili flakes now.
- Mix it all up and pour it over your favorite noodles. So delicious and so simple, right?
